What I am up to lately:
- Condensing and translating into English my community diagnostic, replete with graphs and tables, for your perusal at a later point
- Reading The China Study
- Watching Parks and Rec
- Turning 25 - I contemplated mortality and made fried rice for my health promoters, they smushed my face into the cake, pictures to follow. Also Bobby took this opportunity to call me a "cougar" for being a whole FOUR MONTHS AND 2 WEEKS OLDER, a practice I imagine continuing far into the foreseeable future
- "Training" for a half marathon in November, thus far I have been able to run 4 miles consecutively without dying so I am optimistic
- making Tamalitos de Chipilin with my host family - a tasty variation on normal tamalitos (steamed...corn...nuggets?) which are eaten as a staple food here in Chipuac
- Made with corn dough (masa), chopped up chipilin leaves (pronounced chee-pee-leen. A nutritious leafy green that is considered a weed in the US), salt, vegetable oil, and a little bit of chicken consomme.
- The dough is molded into a nugget shape, wrapped in a corn leaf, and steamed for about 55 minutes.
- Unwrap your piping hot tamalito and enjoy with frijol volteado (refried beans)!
- getting a $75 tax refund, feeling rich!!
It isn't all fun and games, however I just wrote and deleted a long and boring paragraph detailing various work efforts. Trust me, it will read more interestingly in serialized installments.
Hasta la proxima, my devoted readers!
